Cachaca is a popular specialty spirit from Brazil, which is distilled from the juice of sugar cane and stored in wooden barrels, where it develops its mild taste and characteristic aroma. In the past it was also known as aguardente, meaning "hot burning water" or "fire water".

Cachaca is primarily produced in the regions of Bahia, Minas Gerais, Rio de Janeiro, Pernambuco and Alagoas, where there are tons of small businesses that still produce sugar cane liquor in the traditional way.
